Ingredients

  • 2 large carrots, peeled and sliced lengthwise into "hotdog" shapes
  • 1/8 cup water
  • 1 tablespoon low-salt soy sauce
  • 1/2 tablespoon honey
  • 1/2 tablespoon apple cider vinegar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon smoked paprika
  • 2 hotdog buns
  • Optional - Condiments of your choice (ketchup, mustard, relish, etc.)

  • 6 large carrots, peeled and sliced lengthwise into "hotdog" shapes
  • 1/2 cup water
  • 3 tablespoons low-salt soy sauce
  • 1 1/2 tablespoon honey
  • 1 1/2 tablespoon apple cider vinegar
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 6 hotdog buns
  • Optional - Condiments of your choice (ketchup, mustard, relish, etc.)

Method

  1. In a small saucepan, combine the water, low-salt soy sauce, honey, apple cider vinegar, garlic powder, onion powder, and smoked paprika. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 5 minutes.
  2. Place the sliced carrots in a shallow dish and pour the marinade over the top. Marinate the carrots for at least 30 minutes, or up to 24 hours.
  3. Preheat the oven to 400 degrees F.
  4. Place the marinated carrots on a baking sheet and bake for 20-25 minutes, or until the carrots are tender and slightly caramelized.
  5. Toast the hotdog buns, if desired.
  6. Assemble the carrot hotdogs by placing the cooked carrots on the buns and topping with your favorite condiments. Serve immediately and enjoy!
