Method

  1. Rinse the rice in a fine mesh strainer and place it in a small saucepan. Add 1/2 cup of water and bring it to a boil over high heat.
  2. Once boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid. Cook the rice for 18-20 minutes, or until tender and fully cooked.
  3. In a small bowl, combine the almond milk, chia seeds, and vanilla extract. Mix well and let it sit for at least 5 minutes, or until the mixture thickens.
  4. Once the rice is fully cooked, add the chia seed mixture to the saucepan and stir well. Cook the mixture for an additional 5-7 minutes, or until it thickens and the rice is fully coated with the chia seed mixture.
  5. Remove the rice pudding from the heat and let it cool for a few minutes. Transfer it to a serving bowl and top with chopped strawberries, honey (if using), and a sprinkle of cinnamon (if desired).
